A rare cut, this steak is perfect for a quick sear in a hot pan and with just salt as seasoning, it can rival any beef steak. It is tender and juicy thanks to the intramuscular fat running through it. Due to the amount of work the shoulder muscles do, it also packs an abundance of flavour.
